You can use and external diff and merge tools to work on files using other encoding types. Files may display in an unexpected way or be marked a binary if files are not encoded in UTF-8. On the commit details pane, if you right click on a file, it gives the option of opening in the external tool. If turned off, these before and after files will not be automatically deleted. Their youtube videos are really good for beginners, and the UI is very intuitive as well. This is a comparison of GUIs of the software Git. I wasn't able to grasp everything that it could do by just reading documentation. This works for git command line and should work for more.
Since I've learned about branching and versioning the right way, Git has become an immensely more powerful tool to me. This allows you to right click a file and open external diff tool. As it turns out, committing to Master every time isn't the right thing to do.
